Tasting: Beautiful deep ruby. The nose reveals notes of ripe sour cherry, which reappear in the mouth. The palate is very pleasant and round, without aggressiveness, but with a good aromatic persistence, leaving flavors of red fruits very fond.

Soil type: A collection of plots located in the village of Couchey and Marsannay. Dominance of clay-limestone and Marls.
Elaboration: 80% destemmed cuvée, gentle extraction to awaken fine and silky tannins. Aged for a maximum of 12 months in oak barrels. We use old barrels so as not to mark this wine with too aggressive wood.
Tasting Notes : Notes of red fruits and a slightly woody tone give this wine the expression and character of our Burgundian climates. This wine with silky tannins can be enjoyed in its youth but will be appreciated after 2 to 3 years of cellaring.

Soil type: Clay and limestone, rich soil where Ostrea marls and white ooliths can be found. Cold climate suitable for years of high heat.
Elaboration: This cuvée is destemmed at 80%, the rest is added in whole harvests. Aged for 12 months in barrels, only barrels older than one year are used.
Organoleptic characteristic: With a superb sparkling ruby colour, the nose unfolds around a slight minerality that transcends the primary aromas, such as wheeled berries and floral notes. This wine has a pleasantly salty finish.

Soil: Clay-limestone, covered with small gravels favorable enough for good drainage. The mother rock is outcropping. Winemaking: harvested by hand, between 50% and 80% of whole clusters depending on the maturity of the year.
Aging: 12 months in oak barrels with 25% of new oak for vintage 2017.
Tasting: Garnet color with aromas of red fruit, jammy. Nice balance in the mouth, combining minerality and power with a finish on rather marked tannins; a characteristic of this solid wine

Age of the vineyard: 40 years old
Soil type: This plot is located in the heart of the hillside, in the northern part of the commune of Couchey. Red-brown soil formed by pebbles favourable to the cultivation of the vine and the good maturity of the grapes (upper part). The lower part is mainly composed of Ostréa Acuminata marl.
Elaboration: This vine is pruned in its entirety in Royat cordon, which allows us to limit its yield. We destem 80% of this cuvée, 20% of whole bunches will be placed at the bottom of the vat. Aged for 12 months in barrels with 20% new barrels.
Tasting: The colour of this wine is dense, precise and of a beautiful dark ruby. The nose is immediately fullbodied, reminiscent of black cherry, with a hint of white pepper that reflects the elegant minerality of this wine. Fresh and pure tannins underline a pleasant finish.

Soil type: The subsoil of Les Genelières is mainly composed of limestone. At the top, Comblanchien Limestone is locally covered with gravel scree called bedded grèzes. In the middle part, the Premeaux Limestone is the subsoil. In the lower part of the climate, the Entroques limestone is very present and outcrops over more than half of the climate. The thin, stony soils at the top of the hillside thicken down the slope.
Elaboration: The manual harvest allows us to bring in grapes that have been previously sorted. This cuvée was made 80% in whole harvests in 2018. This is followed by 18 months of ageing in barrels with 60% new barrels.
Tasting notes: The nose is very clear with aromas of cherries and stewed fruit, with a touch of vanilla. The entry in the mouth is lively and supple in the same movement. The length and aromatic persistence attest to the qualitative potential of this terroir, supported by an undergrowth ageing process with a good proportion of new barrels.

Soil type: plots located at the bottom and middle of the hillside. It always gives wines with silky tannins. On a clay-limestone soil.
Elaboration: 70% destemmed harvest, 30% whole bunches will be added in order to bring freshness and complexity. Aged in barrels for 12 months, barrels from 2 to 8 years old are used for this cuvée.
Tasting: power brought by the climates coming from the hillsides and subtlety of the aromas coming from the more clayey soils. Notes of red fruits and beautiful texture, will exalt all its values after 3 to 5 years of ageing.

Grape Variety: Pinot Noir
Soil: Located mid-slope on the north side of the village of Fixin; the soils always give our wines both structure and silkiness in texture. Located on clay and limestone ground, the soils have good depth and excellent draining capacity.
Winemaking: Manual harvesting, the mirande grapes have brought a lot of power and structure, the silky component is brought by the more generous grapes located on the soils containing more clay. 60% of whole clusters.
Aging: 18 months in Oak Barrels, 40% of new oaks.
Tasting: shades of red fruit aromas, excellent depth and balance, provide the wine with beautiful vivacity. The addition of 40% new oak gives this wine a good length in the mouth.

Type of soil : Clay and limestone, soil with a good depth and good drainage capacity.
Elaboration : manual harvesting, since the 2011 vintage this cuvée has received a percentage of whole bunches which varies according to the quality of the grapes. We added about 50% whole clusters in 2018.
Tasting : Intense and brilliant colour. The finesse of the terroir is confirmed on the palate by a beautiful salinity. Silky tannins give this gourmet wine its delicacy and palatability.
